I had already tried the Printer's context menu with the same
unsatisfactory result!
I was just making an aside about being unable to open the pscript.drv in
ICON-view, and because there are only 3 tabs to its notebook -
Become/Icon/File - there's no Menu tab to activate the Icon View with
all the Printer model icons within.

Anyhow - I completely removed the contents of the \os2\dll\pscript
directory after deleting the previous (incorrect) Laserwriter printer
object, then rebooted to realize that the *active* PS directory was
under \ecs\install\prndrv not \os2\dll\pscript - this time I went
through all the PMDD_* directories and saw there was in fact a PPD
directory with just the APLW3101.PPD in it, and in PMDD_0 there was an
auxprint.pak which just contained the encoded version of that PPD file.
What I then had to do to install was as you said - from the context menu
select new device, other eComstation driver, and point it specifically
to \ecs\install\prndrv\pmdd_0! The entry for the Apple Laserwriter
Select V2.51 wasn't listed with the other 8 Apple Laserwriter drivers,
right at the beginning of the list - but was in the "L" section (I _had_
been checking that on all previous unsuccessful attempts too - always
scrolled from first to last entry, in case!) - so finally I have the
exact correct PS driver! Hooray!
Thanks to all for the help in resolving this thing that was bugging me!
