I have no ZipChip but in the same situation I would solder it
directly onto the mainboard. Not fancy but probably the safest bet.

From what I've read most people conside this accelerator the
ultimate in upgrading a IIe anyway so you may not want to
remove it anyway.

I don't need to tell you that a ZipChip is much more valuable
than a mainboard and breaking the latter in the process would
be less aggravating. I also bet that you have several spare boards ;-)

What advantage would that have over a permanently soldered-in ZipCip?
