I freeze tomatoes but then they are only good for cooking. I cut up
the tomatoes and bag them and freeze them as is. I cook them down
later for sauces when the weather is cooler.
Squash has to be cooked, then packaged and frozen. Most vegetable have
to be "blanched", which is placed in boiling water and timed for a few
minutes before cooling in cold water. Squash, though has to be cooked.
I can't help you with basil and oregano. I don't freeze them, I hang
them to dry and use them as is.
