Well, I think I may have mentioned this before, Greg, but I can recommend
preserving tomatoes by "canning", that is, bottling in special jars. In the
UK, they are called kilner jars, in France, "Bocaux … st‚riliser". The
process isn't hard, particularly, but there are some things to look out for.
So far as I'm concerned, however, the special thing that I do, is to prepare
the tomatoes by concass‚eing them first. (Peel, seed, juice and chop
roughly). They seem to come out of their jars identical in taste to the way
they went in. This method of preparation is wonderful for subsequent cookery,
but no good, of course if you're seeking to substitute for fresh ones. I've
not found _any_ way of preserving tomatoes that in any way resembles the
texture and flavour of fresh whole tomatoes on the other hand.
