When I worked for a wholesaler who shipped birds frequently, he would often
use a soaked sponge (in a water dish) as the water source. It was wet enough
for the birds to drink from, but dry enough to prevent spills. Of course he
used this only for little guys, primarily finches and canaries. He used the
cutup fruit method for the hookbills and any bird that might consider
destroying the sponge.
