There are a LOT of recipes out there. A pound of butter per pound of
crayfish seems rather a lot, tho.
My favorite Cajun culinary authority - Justin Wilson - used a five-gallon
pot of boiling water, salt, pepper and cayenne pepper for about 5 pounds.
He boiled them till they floated to the top. What you do with them after
that is up to you: you can eat them as they are, or make a dip, or a creole
sauce, etc.,etc.
