There are on-demand water heater available. Two of the most popular
models are made by Aquastar and Paloma. They run on propane and
natural gas and _replace_ a tank heater. They will provide
continuous hot water, whenever you need it, and as much as you need
(provided you buy a properly sized model). 
We have the Aquastar 120 and we're quite happy with it.
