These two recipes don't soak the kidneys ahead of time, but maybe they
will give you some ideas on the stew itself.

Title: Kidney Stew

Yield: 4 Servings
2 Beef kidneys
2 1/2 c Water
2 1/2 ts Salt
3 tb Shortening
3 tb Flour
1 ea Clove of garlic, crushed
1 md Onion; chopped
1 ea Bay leaf - crushed
ds Cayenne pepper
pn Thyme
Simmer kidneys in boiling water with the salt for about 20 minutes.
Strain the stock and save.
Cut the kidneys and remove fat and sinews. Dice the kidneys.
NOTE: Recipe does not say when to add the diced kidneys.
Make a brown roux from the shortening and flour and add the kidney
stock. Cook until thickened.
Season with garlic, onion, bay leaf, 1/2 ts salt, cayenne and thyme.
Cover and simmer for one hour.
This is especially good served with rice.

Title: Kidney Stew

Yield: 4 Servings
1 lb Kidneys (any kind)
3 tb Butter
1 md Onion, chopped
2 tb Flour
10 1/2 oz Consomme
1/2 c White wine (or tomato juice)
Cut kidneys into pieces about the size of walnuts and saute in three
tablespoons of butter along with the chopped onion.
When kidneys are done, remove from pan and keep warm.
To the sauteed onion add two tablespoons of flour and the consomme.
Also add white wine OR tomato juice. Simmer for 10 minutes until
mixture thickens, add kidneys and heat through but do not boil.
Serve with rice.
