One possibility, if you didn't mind Pascal, is Complete Pacal II.
There are a few variations on Basic floating around out there, besides
plain Applesoft Basic which is built in but doesn't take advantage of
any of the GS's abilities. There is Micol Advanced Basic, Super Basic,
MD Basic and a free version of Apple's GS Basic.
