I would take the camera and tape it on there.  Just leave the lens cap on or
off (doesn't matter) and just record the voice.  BE SURE to leave yourself
leader room if you're editing with non-frame-accurate equipment because 
without
video, you'll have a harder time marking ins/outs.

-> compared to say a standard VHS tape?
I don't have the specs, but I would venture to say tha it doesn't matter.
standard VHS tape, to me, would mean a VHS tape recorded in hi-fi (stereo)
mode.  SVHS or otherwise, you should record hi-fi because it is NEAR
cd-quality.
-> And last but not least, what are some of the best 3 chip camera's out

The JVC GY-X2U is a great camera.  It's my dream.  SVHS, 12:1 variable zoom
(usually standard, but has c-mount so a variety of lenses are possible),
one-piece unit.  But at $6000, it's a little over my head.
Also, the new Panasonic DSP-800 "Supercam".  Outperforms the GY-X2U in 
everal
areas and cheaper, too.  Plus, it's digital (hence, 'D'igital 'S'ignal
'P'rocessor).  About $5500.  SVHS, btw.

Yes.  SVHS plays back about 400-420 lines of resolution.  VHS only 220-240.
Pretty much all pro cameras are going to offer you this "700 lines of
horizontal resolution!" from SVHS all the way through Hi8 and Betacam...
