To me, 'individually tailored' means a different setup on each
channel, not just separate levels for a global effect.  If the AWE
can do the former, I'll go buy one tomorrow.

Ask your local recording studio engineer.  Just because the sample
rate is the same does not mean the sound will be.  There are AD/DA
discrepancies, noise, distortion and a host of other things which
will make a difference.

If you are trying to tell me that an AWE offers the functionality of
an Akai sampler then I must have been looking in the wrong shops.
OK, I accept that 6Mb is not a 'massive' memory by PC standards but
it is enough to do the job required.  The money goes into sorting
out all the other problems.
Surely, no one would seriously say that something costing under 200
quid is exactly the same as something costing more than ten times
the price?

That rather depends on what you mean by 'real thing'.  If you
mean the Akai, that's no more real than hardboard is wood.
... and in your own words 'practically indistinguishable' does not
mean 'exactly the same'.  That's one of the things you pay the extra
dosh for.  As in so many other ares, the law of diminishing returns
rapidly sets in above a certain price point and you end up paying a
lot for for little extra.
