An analog synth makes it's sound through the excitation of electrons within 
an active device, like a transistor or a tube, if you want to go back that 
far. It puts out an actual voltage for it's signal. This is called an analog. 
Moogs and Arps are analog synths, as are casio CZ series (these are just 
digitally controlled, but they are analog synths).
digital synths (essentially the rest of them, now adays) use computers to 
approximate the analog, using stair step type of outputs that happen so fast, 
you don't hear any residual jaggies. Plus, there is filtering that smooths 
things out at that point. The difference is like the difference between tube 
and transisitor amps. The tubes have more fatness to them, almost more tone 
per se. The digital stuff is capable of very delicate textures, but there is 
almost a lack of body to it.
