On my "touring" bike, I usually never come off the middle ring. I, too, use 
all the cogs. I'm not into all that much speed, but I can go all day. I'm 
like the old bull in the story about the young bull and old bull on the hill, 
looking down at all the cows. Young one says, "Let's run down there and breed 
a couple of them cows!" Old one says,"No, let's WALK down there, and breed 
them ALL!).
 Now, whe I go visit my brother on Lake LBJ, I tell a different story! Those 
sharp hills have me switching gears like crazy! My legs are NOT used to 
hills, at all, so I tend to use up some gears up there.
