If you want to follow Stable with slackpkg, you just uncomment some mirror you like in /etc/slackware/mirrors and that is it. There is no dwongrading from CUrrent to Stable btw.
slackpkg.conf is self-explanatory. YOu may have a loot at it but afaik the default should work fine.
