Multifunction mission?  She has neither the space or the personnel of the
Galaxy.  In science, the space and number of brains carried is a major
factor.  Ergo, the sovereign is not the better ship at science.

Whup ass?  Same class phasers, same number of torpedoes tubes.  The
Galaxies while a slightly older design are upgraded as upgrades become
available.  So design wise they are the same age.  Equal weapons.

Protection?  Again, upgrades and better technology is plugged in as it
become available.  It is specifically said that the Galaxy is built to
accommodate upgrades as the hull is expected to last 100 years.

Power plant?  The reaction that powers a starship takes place in an area
less than the size of your fist.  The Defiant is an expression of this.
 Big ship power plant, big ship shields, big ship weapons, no big ship.
 So the Sovereign has more power?  There is no reason to suggest it.

Ergo, the Galaxy class of 2380 is not the Galaxy class of 2366.  It is
stronger, better protected and packs the same punch as any other capital
ship starfleet has.  However, it is a spender ship, so you don't fight them
unless you must.  Fight the smaller cheaper frigates if you have any choice
in the matter.
