Hostile Encounter
Alien Encounter (example - the Metrons or the Organians) Colony Support
(Example - Man Trap where the E-Prime delivers supplies to Dr. Robert
Crater, or the Deadly Years where the E delivers Supplies to Gamma Hydra
IV)
Law Enforcement (Example Mudd's Women, The Way to Eden) Espionage (Example,
The Enterprise Incident, arguably The Trouble with Tribbles)
Weird/One of a kind - Prototype testing (The Ultimate Computer), or Getting
Hijacked (Menagerie), Passenger Delivery

I should really include "Unknown"  since we never learn what the
hell the Enterprise is doing at Colony Q before encountering the Karidian
Players in "Conscience of the King",  but I usually default to my
best guess.

in TOS Exploration missions are the lions share.  I have onbly scratched
the surface of TNG, but SAR and Diplomacy seem to dominate the first half
of the first season.

In anycase, like I say, it's plain that what we think a Starship is doing
at the beginning of the episode is generally not what they are doing
halfway through the episode and often it changes again by the end. 
Starships need to be flexible and to be able to take a whack at almost
anything.
