For all we know, the crew numbers are given.  If smaller and more clever
labs are designed, existing ship would be upgraded to this clever designs. 
Ergo the size advantage remains.  The advantage to the Galaxy is the lavish
use of space.  Legs, more room per person.  Mental health space and yes
families are part of that.  Joe science crew goes back to a family and the
wonderful decompression that affords.

Now you are asking me to accept that Starfleet is stupid.  You want me to
believe Starfleet would design a ship for a 100 year service life, but make
it impossible to upgrade the weapons.  Hell design it for a 50 year service
life and make maintenance and upgrades difficult.  No, I will not accept
that Starfleet is stupid in order to make one class of ship more
"special" or "better than the rest".

Yes we've never see it fire a quantum torpedo.  We have also never seen the
Queen give birth, but believe the reports she has.
