Canning is not difficult but things have to be done properly, you don't
want to run into bocculism, it can be deadly. You should have a
canner, proper jars and a book that tells you how. Here in Ontario, I
bought a book for about $4.00 that was very good. I found it right in
the same area that was selling the canning supplies. Pickles are a
little more work but not as big a risk because sugar is in pickles and
it's a preservative. It shouldn't be too hard to find a book to help.
Do you have a public health department that you can contact? Often
they will have good information for you, they don't want anyone to get
sick.
