There are spiral bullet traps that deal with this. The spiral trap slows
the bullet down gently rather than the old style angled steel plate trap.
Any newly constructed range should use the spiral variety.
A friend of mine that owns a couple of ranges has installed these, and
exhaust fans capable of exchanging all the air on the range in about 30
seconds. No problems.
