 I make half, to a 9" pie pan. It's very sweet so I would not
 recommend it to anyone on a sugar restricted food regimen (I hate that word
 'diet'). It goes excellently with "Cornell b-que Chicken" (recipe for this
  on request) and Harvard Beets. :) Recipe is as follows:

 Welch Corn Bread (1 loaf, oven preheat: 350 F.
 Time: 50-60 minutes.

 Grease loaf pan. (half batch: 9" pie plate)

 In large mixing bowl combine:

 1 cup yellow stone ground cornmeal
 1 cup all purpose flour
 1 cup granulated white sugar
 1 tsp salt

In small bowl or measuring cup combine 1 tsp baking soda to 3/4 cup
sour milk OR *buttermilk.

* If using buttermilk powder: 3 TBSP of it to 3/4 cup water

 (If you want to use sour milk. Add tsp vinegar to the milk.)

Add to the milk 3 tbsp veg oi.
Add wet to dry, blend well.

THEN blend in 1 beaten egg. Adding the egg last is what gives the
crust it's delicate crispy deliciousness. : )

Pour batter into greased loaf pan. It's usually done for me in 50
minutes. Let cool about 10 minutes, remove from pan, let cool.

Cut into thin slices. Serve. It's fantastic. :) Enjoy!

I've contributed this bread to family gatherings, for years when we
lived near family... Usually Thanksgiving. It's been a big hit.

You can serve it with dinner or as a snack with butter and or grape
jelly....

They probably have a gazillion bad calories so once a year is
probably just as well! (along with the once a year Dream Cheesecake
heheh..)

BTW There's one corn bread recipe I'd love to find that is like the
cornbread they serve at "Chili's" In Upstate NY. It's very rich but
not too sweet. I think it has nacho cheese in it. And jalapeno
peppers.
