It's true that evolution is a principle that, as you said, given the right energy and materials will lead to organisation. However, the suggestion that evolution has a "purpose" or similar is wrong. Humans are the result of lots of extremely unlikely events. These events occurred because of the enormous number of trials that were performed (so the low probability was overcome by rolling the dice sufficiently often). One way of looking at the situation is to say that if you waited long enough you would be sure to get something roughly like humans. Even if true, that proposition is no more profound than saying that if you deal the cards sufficiently often you will get a perfect hand.
