I run incremental backups of /home and /etc, firstly I do hourly
backups to a local (but separate) disk drive on my desktop machine,
secondly their are daily incremental backups to the Pi + USB system
which is out in the garage (quite a long way from the house).
I used to use rsnapshot but then wrote my own incremental backup
software using rsync's --link-dest option which sends the backups to
an rsync server process running on the Pi. This makes the backups
more secure because an intruder on the backed-up systems isn't able to
(easily) get at the backups on the remote system. Since they're
incremental backups they can't be overwritten remotely either.
