I think you should look more closely at plant evolution.  Try googling
on just that phrase: "plant evolution" to see just how much change has
occurred clearly visible in the fossil record.  The Paleozoic and
Mesozoic eras were the time in which the major features of the plant
kingdom developed: the moss and other non-vascular plants, the ferns
and other non-seed vascular plants, the non-flowing gymnosperms, and
the origin of the flowering plants.  The Cenozoic era was the time
when the flowering plants blossomed, so to speak.  You just haven't
been looking!
