You don't have to  slowly change their diet. Plum-Heads will lovingly dive 
into almost any kind of fruit.
Mine finally laid one egg, on the cage floor, this year. Their cage is 2x2x6.
This is a few of the things that I know mine like...fresh corn on the cob, 
grated carrots, blue berries, kiwi fruit, figs (dried or fresh), grapes, 
pomagranet, oranges, banana. In other words, if you find it in the fruit 
section they will probably like it. I also feed sprouted sunflower. They 
don't 
seem to care much for the smaller seed...yours might, and they like nuts.
They love the birdie bred but they don't care much for rice. They also like 
cooked beans, but I only feed this here during the cooler weather.
