Just to let you know, wondering if this would help you...
You mite not need to read a book if you want to start out in gfx programming.
You mite already know this but:
Mode 13h 320X200 - 256 is very easy to work with.
To get into mode 13h you use:
Mov Ax,13h    ; Mode Number
Int 10h       ; Video Interupt 10h
A000:0000 is the start of the Vga (320X200X 256) memory. 320X200 = 64000 one 
segment.
so all you need to do is (pseudo code)
A000:0000 = Color
that would set the first pixel to a color value (from 1 to 256)
A000:0001 would be the second pixel
when we get to A000:0320 (last pixel on the first line) the next one would be
A000:0321 (the first pixel on the second line)
so it goes, from top to bottom, left to right.. read the screen like a book.
and of course, the last pixel (320) on the last line (200) would be 
00:64000
