1" hex or square porcelain tiles work great for grinding. They are
high-fired and have the same texture and consistency all the way through,
and they're pretty hard. I am partial to the hex variety.

local tile store.

I don't bother to open up the channels anymore.
~2 square feet is more than enough for a 16", that's ~$8 worth.
I think that the hex tiles available from Willmann-Bell show much less
tendency to chip than the bathroom variety, so they may be worth the higher
price.
