More moves doesn't mean it's realistic. The Virtua Fighter series is more
realistic because: 1) no cheap magic attacks to substitute for good fighting,
2) characters don't spend half their time in the air; 3) characters don't do
10-hit combos. The attacks you do are largely feasible, although they would
be quite exerting on the people who were performing them!
And if you hate limited moves, why do you like Bushido Blade? I thought
there were even LESS moves in that than in Virtua Fighter.

Of course, you have to wonder just how good those people really are. I'm
to the point in VF2 (on the PC, mind you) where I'm not just adept at beating
the AI, but I set them up so I can hit them after a Ring Out. Very
satisfying to hit someone who's not ready for it!
