Yes, you can gain a minute or so by agitating the mix like that but what
you are really doing when doing so is weakening the final stone as you are
breaking up the preliminary fusings of the particles by the strong
agitating the mix.
Most of the Dental Stone mixes have a working time of 5 minutes or so. 
That time is from when the water hits the powder and a minute and a half of
mixing ends up being a significant part of that time. Bob May
