  Sure, there's maturity - blood, perhaps?  Most games targeted at kids don't 
have blood in them.  Also, mature themes don't have to involve porn (like you 
seem to think - maybe THAT's why you're into mature games so much); it can 
just involve a more mature approach to a game, like GoldenEye's less blunt 
approach to success (stealth pays off, for instance).  Extreme-G is also more 
mature, if just because it has Wipeout-like aesthetics.
