I dunno about RH but with Mandriva you can do exactly that. Set up the cooker
repo or plf etc & then select those apps etc you want to update.

Blimey. Usually you have to choose to update the kernel.
I have to say that I've not used RH since 5.2/6.0 & since then it's been
mandriva, Ubuntu/debian/knoppix or Suse/Novell.
