then you are boiling them too long... i regularly boil veggies over here...
almost like steaming them if it's done right and you can get a nice broth
that is useful as a soup starter or can be used in place of water in some
recipes...

what i do is to bring the water to a nice rolling boil first and then add
to it what i'm cooking in it... could be meat, herbs or veggies... then
it's only a few minutes before it's done and only one or two more before
being overdone...
