Afghan Noodle Soup with Meatballs, Yogurt and Mint

      1 medium onion
      8 ounces ground lamb
      2 tablespoons chopped fresh parsley
    1/2 teaspoon ground cumin
      1 egg yolk
    1/4 teaspoon ground black pepper
      1 tablespoon vegetable oil
      2 large garlic cloves, minced
      1 cup peeled chopped tomatoes
      3 cups chicken stock (with a handful of added herbs)
      4 ounces fresh linguini, tagliatelle or 2 ounces dried noodles
       (feel free to use more)
    1/2 teaspoon salt
    1/4 teaspoon ground cayenne
      2 tablespoons fresh mint, chopped
    1/2 cup plain yogurt

Chop the onion.  Mince 2 tablespoons of the onion; place in a medium 
size bowl. Reserve remaining chopped onion. Add lamb, parsley, cumin, 
egg yolk and black pepper to the bowl with the minced onion. Mix and 
make meatballs.  Set aside. In a medium size saucepan, heat oil. Add 
reserved onion and garlic and saute two minutes. Add tomatoes and stock. 
Place meatballs in tomato mixture. Cover and simmer on low for about 
five minutes or until the meatballs are cooked through. In a large pot, 
cook noodles. Drain noodles and add to meatballs and stock. Stir in 
salt, cayenne and mint. Serve hot soup in large bowls. Stir in a 
tablespoon of yogurt before serving. Yummy and karmically sound. Serves 
four.
