I share your (and others') misgivings about the thermal mass of a brick
wall. A possible solution is a brick product called Z-Brick, if I remember
correctly, that consists of actual bricks that are only 1/4" thick.
They are installed like wall tile--which is much easier than laying
brick!--and have the same finished appearance as a brick wall. This will
provide the desired match to your house, but have a thermal mass something
like 20% of that of a full-thickness brick wall. This will still be
significantly slower to reach ambient temperature than, say, a single layer
of aluminum siding, butit will present nothing like the problems you could
have with a full thickness of brick. If necessary, cooling the structure
would, I think, best be accomplished with fans. Water would probably work,
but do you really need all that humidity?
